Rainbow Plate

When the leprechaun hides his pot of gold, he must find a rainbow worthy of his treasure!  Create this healthy and delicious rainbow with an array of fruits and vegetables.  Children will delight in eating the leprechaun's rainbow and his treasure!

  • Supplies Needed

    • Variety of colors of fruits and/or vegetables to create the rainbow (ROYGBIV: Red, Orange, Yellow, Green, Blue, Indigo, Violet).  Such as red, green, yellow and orange peppers, strawberries, oranges, blueberries, grapes, tomatoes, peas, carrots etc. Anything goes!
    • Cottage cheese
    • Pineapple chunks (optional)

    Preparation

    1. Arrange the fruits and/or vegetables in the order of the rainbow on a plate.
    2. Make a cloud of cottage cheese at one end.
    3. Add some pineapple "gold" to the cottage cheese if desired.

    Hi, I'm new to this site. It looks great. I'm going to try to make a felt board story using this recipe, as well as incorporating a leprechaun and some rainbow fantasy.
