Mexican Molettes and Mollete Dulce Recipe
A Mollete is an open face sandwich commonly eaten in Mexico, made with bolillos - a traditional Mexican baguette-type crusty bread that is about 6 inches long.
Molletes in Mexico are typically served with salsa or pico de gallo. Molletes can be topped with sliced ham, chorizo, mushrooms, or anything you like! This version uses refried beans and cheese, and makes an easy and delicious lunch or snack that your kids will love.
Mollete Dulce (recipe is further down below the savory Mollete) is a deliciously sweet variation of the Mollete sandwich that uses cinnamon and sugar!
Supplies Needed
Mollete - Ingredients
- 2 Bolillos - or you can substitute a regular baguette
- 1/2 cup Refried Beans
- 1/2 cup shredded queso blanco (or your favorite cheese)
- 1/4 cup salsa or pico de gallo (optional)
optional additional ingredients:
- ham or any sandwich meat
- chorizo
- mushrooms
- anything that you like!
Mollete Dulce (Sweet Mollete) - Ingredients
- 2 Bolillos - or you can substitute a regular baguette
- 3 tablespoons white sugar
- 1 teaspoon cinnamon
- butter
Preparation
Mollete - Preparation
- preheat oven to 400 degrees
- cut the bolillos lengthwise and open up
- spread the refried beans atop each side
- shred the cheese and add on top
- bake in 400 degree oven for about 5 minutes, until beans are warm and cheese has melted nicely
- remove from oven and serve with salsa if desired
Mollete Dulce (Sweet Mollete) - Preparation
- preheat oven to 400 degrees
- slice the bolillos lengthwise
- mix together the cinnamon and sugar, and sprinkle atop the bolillos
- top with pats of butter
- bake in 400 degree oven for about 6 minutes, until slightly toasted
- if you wish, cut into finger-food size bits and enjoy!
TIP: If you don't have baguette on hand, make a simple version of Mollete Dulce using slices of buttered toast, sprinkled with cinnamon and suger!
