Mexican Corn & Beans Recipe
Maize y Frijoles
(Corn and Beans)
Corn (or Maize) has long been a staple of Mexican dishes. Scientists studying the genetics of the corn plant have found evidence that maize was first grown by humans about 9,000 years ago in central Mexico, near Oaxaca and Jalisco. Maize is now the largest crop in all of the Americas!
The small, shiny black turtle bean is especially popular in Mexican cuisine. It is often called simply the black bean or frijol negro in Spanish.
