Salted Peanut Crisps

One of the most popular American snacks in the 1950's, salted peanut crisps are still a hit with kids as well as an easy and fun snack to make.

In our opinion this recipe is not as hard on the teeth as peanut brittle, and is a great "quick energy" snack for families on the go!

 

Ingredients / Tools
  • 1 cup shortening (part butter)
  • 1 1/2 cups light brown sugar packed
  • 2 eggs
  • 2 tsp. vanilla
  • 3 cups sifted flour
  • 1/2 tsp. baking soda
  • 2 cups salted peanuts
Preparation
  1. Heat oven to 375 degrees.
  2. Mix shortening, brown sugar, eggs and vanilla.
  3. Sift together flour, soda, salt and stir in.
  4. Stir in peanuts.
  5. Drop by rounded teaspoonfuls about 2 inches apart onto lightly greased baking sheets.
  6. Flatten with bottom of glass dipped in water, then in sugar.
  7. Bake 8-10 minutes. Makes about 6 dozen.
