Bannock

Bannock is a flat cake, baked on a griddle and popular in Scotland. Native Americans in the northern Great Plains in the United States adopted bannock in their own cuisine over the 18th and 19th centuries, most likely from Scottish fur traders. About the same thickness as a scone, bannock is a simple source of carbohydrates which was easy to make on the trail and neatly complemented high protein trail foods like Pemmican.

Ingredients / Tools
  • 2 mixing bowls (one large, one small)
  • wooden spoon
  • fork
  • cookie sheet
  • 4 cups flour
  • 2 Tablespoons Baking Powder
  • 1-2 Tablespoons sugar (optional)
  • 1/4 cup vegetable oil
  • 1 cup milk
  • 1 egg
Preparation
  1. preheat oven to 400 degrees
  2. Add dry ingredients to the large bowl, mix together
  3. In a separate bowl, mix egg, milk and oil
  4. Add the egg mixture to the dry ingredients, mix well
  5. As mixture firms, knead with your hands until the dough feels elastic.
  6. Using your knuckles, roll the dough onto the cookie sheet to form a flat sheet
  7. Using your fork, make lots o' holes in the dough. (thispart is extra fun for kids!)
  8. Bake your bannock at 400-425 degrees for 20-25 minute
