Spanish Rice

Rice has been a staple ingredient in Mexico for centuries, as it can be grown practically anywhere, even on steep hillsides. Spanish rice is often served alongside many traditional Mexican dishes.

The "Tex-Mex" style of Spanish rice incorporates chunks of grilled or sauteed vegetables.

Our Spanish rice recipe is a quick and easy way to bring the flavor of Mexico to your table!

Ingredients

  • 2 cups rice
  • 1 cup diced tomatoes
  • 1 cup diced onions (optional if your kids are anti-onion!)

optional additional ingredients:

  • cilantro
  • garlic
  • peas
  • carrots
  • corn
  • chile powder

Preparation

  1. Cook the rice per instructions
  2. Add the other ingredients and mix well!

An easy variation is to use a cup of salsa (store-bought or homemade) instead of tomatoes and onions!
