Cat's Tongues - Mexican cookiesback to traditional Mexican children's recipes
Cat Tongues

Cat Tongue cookies are small, dry finger-shaped cookies that are popular in Mexico and are easy and fun to make! Traditionally bakers use a pastry bag to sqeeze the thin pipes of dough onto the baking sheets, but in a pinch you can easily make these using a plastic sandwich bag to achieve the same results!

Ingredients

  • 1/4 cup (1/2 stick) soft unsalted butter
  • 1/3 cups white sugar
  • 1/4 teaspoon vanilla
  • pinch salt
  • 2 egg whites, room temperature
  • 1/3 cups all-purpose flour

Preparation

  1. Preheat oven to 425 degrees
  2. Cream the butter, sugar, vanilla, and salt until fluffy.
  3. Beat in the egg whites just enough to blend
  4. add the flour and stir gently until mixed -- do not overbeat
  5. Butter and flour a baking sheet
  6. Take a plastic sandwich bas and carefully snip the corner off with scissors, to make a hole about 1/4 inch in diameter. Err on the side of a hole that is too small, you can alsays snip it larger if your cat tongues are too skinny!
  7. spoon the batter into your bag, and squeeze slowly to pipe out your cat tongues:
    Hold the corner of your bag very close tothe baking sheet so your cat tongue is a thin layer of batter. Make your cat tonges about 2 inches long and space them about 1/2 inch apart, in ro
  8. Bake at 425 for 4 to 5 minutes, or until the cookies have browned lightly around the edges.
  9. Remove them immediately with a spatula to a cooling rack; if they harden before you can remove them, return briefly to the oven to soften.
  10. Store your cat tongues in an airtight container.
