Sopa de Frijoles Negros
(Black Bean Soup)

Black Beans (frijoles negros) are a common ingredient used in Mexican cuisine. This is an easy soup that you and your children can make with black beans! Feel free to add any ingredients that sound yummy to you!

For some extra fun, let your kids mash up the beans with a fork before you throw them in the blender.

Ingredients

  • 2 cans black beans (frijoles negros)
  • 2 tablespoons butter or olive oil
  • 1 stalk celery
  • 1 clove minced garlic (or 1/2 teaspoon garlic powder)
  • 1 onion, diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin (optional)
  • 1/2 teaspoon salt
  • 1 cup chicken broth (or one can)
  • 8 oz tomato sauce (1 can)
  • 1/2 cup sour cream
  • bunch fresh cilantro, chopped (optional)

optional additional ingredients:

  • cilantro
  • garlic
  • peas
  • carrots
  • corn
  • chili powder

Preparation

  1. Place canned beans (after your kids have had fun mashing them up with a fork) in blender a bit at a time, blend well
  2. In saucepan heat butter or oil, add diced onion, garlic, half of cilantro, celery, spices and salt
  3. Cook over medium heat until onion is transparent
  4. Add tomato sauce, blended black beans, and chicken broth
  5. Mix well and heat through
  6. Serve hot in a bowl, top with a dollup of sour cream and a sprinkling of fresh cilantro
