Mushroom Egg

Straight from the kitchen of CTK founder Rachel Addison's Latvian mother Mary, this recipe is a fun way to create a “mushroom” that your kids will love!

Real mushrooms are a common ingredient in the Latvian kitchen and used in a wide variety of traditional Latvian dishes.

Though not an "authentic" Latvian dish, this is a great way to entice your young child into eating some healthy food - as well as teaching them a little something about mushrooms, and Latvia!

Ingredients (per serving)

  • 1 Hard boiled egg
  • ½ Roma tomato (with seeds and pulp scooped out)
  • 1 teaspoon cream cheese
  • Lettuce for garnish
  • A plastic baggie

Preparation

1. Boil, cool and peel the hard boiled egg.
2. Cut Roma tomato in half and scoop out pulp and seeds.
3. Cut little slice from bottom of hard boiled egg to help it stand up (hint: dab of cream cheese on the dish can help it stand up).
4. Place ½ of the tomato on top of the egg.
5. To make dots on the tomato to make it look like a mushroom, snip a corner off of the baggie and stuff the cream cheese in the baggie. Make dots as you squeeze the baggie.
6. Add lettuce on bottom of dish as a garnish.
