Gurķis Salāti
Cucumber Salad
Cucumbers as well as dill are grown in most Latvian gardens and farms. Pickling the cucumbers and other vegetables with dill has historically been a popular way to preserve the fall harvest throughout the cold winters in Latvia. This fresh cucumber salad is a good way to introduce your kids to the foods of Latvia before winter sets in!
Ingredients
- 2 Cucumbers thinly sliced (optional peel the cucumber before slicing)
- 2 Thin slices of onion chopped
- ¼ Cup sour cream
- Salt/pepper to taste
- 1 Teaspoon lemon juice (or to taste)
- Dill (1/4 teaspoon dry, or 1/8 cup fresh)
Preparation
1. Thinly slice cucumbers and place in a medium sized bowl.
2. Chop onion and add to cucumbers.
3. Mix in sour cream.
4. Add salt, pepper and lemon juice to taste.
5. Add dill.
6. Stir, and let chill.
7. Serve and enjoy!
