Vegan Snickerdoodles
In Germany, cookies are common during all kinds of celebrations from the winter holidays to the first day of school. Snickerdoodles are popular cookies in Germany and often served with tea and coffee. Thanks to Amy Buetens for sending her recipe for this easy and delicious Vegan option!
Ingredients
- 2 ¼ cups white or whole wheat flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup natural dry sweetener ie Succanut, or cane juice sugar (non vegan use regular sugar)
- ½ cup vegan butter or margarine (non vegan use regular butter)
- ¼ cup canola or vegetable oil
- ¼ cup orange juice
- 3 Tablespoons water
- 2 Tablespoons vanilla
- 2 Tablespoons sugar
- 2 Ttablespoons cinnamon
Preparation
- Preheat oven to 375 degrees
- In a bowl mix together the flour, baking sod and, salt
- In a separate larger bowl, mix together the sweetener or sugar, butter or margarine, oil, orange juice water and vanilla.
- Gradually stir in the flour mixture into the wet mixture.
- In a small bowl combine 2 tablespoons sugar with 2 tablespoons cinnamon
- Form the dough into teaspoon size balls and roll in the cinnamon sugar mixture.
- Place on cookie sheet and flatten with a fork.
- Bake for 8 -10 minutes or until lightly golden.
