Tacos
The traditional Mexican taco is a soft maize (corn) tortilla filled with seasoned ground or shredded meat. The taco in the U.S. is typically made with a hard shell tortilla and has additional ingredients like cheese, lettuce and tomato, a tradition which originated with the Mexican population of old California.
Our version of Tacos also has a vegetarian option, made with tofu!
Ingredients / Tools
- 1 box crispy taco shells, or soft tortillas
(try making our easy homemade tortillas!)
- 1 pound ground or shredded beef, chicken or pork
OR 1 package firm tofu, crumbled
- 1 packet taco seasoning
- 1 can refried beans
- 1/2 cups water
- 2 cups shredded cheddar cheese
- 1 large tomato - diced
- shredded lettuce
- 1 onion - diced
- optional additional ingredients:

sliced avocado
-
sour cream
-
salsa
- cilantro
Preparation
- Preheat oven to 300 degrees if using hard taco shells.
- Put hard taco shells in oven for 5-10 minutes until warmed and crispy (do not overheat or they will singe) - to warm soft tortillas, microwave for a few seconds just prior to serving.
- In a skillet, brown the meat on med/high heat.
If using tofu, fry crumbles in 2 tbsp butter until lightly browned.
- When the meat or tofu is just about done, mix in the taco seasoning and 1/2 cups water stirring often, simmer 5 min.
- As meat is cooking, grate your cheese, chop your veggies and warm the refried beans according to directions on can (mix in 1 tbsp of water to make them creamy)
- Assemble as you see fit! Serve with salsa or pico de gallo.
